Ingredients for 2 sandwiches:

4 slices of low carb white bread
(e.g. according to this recipe)
1 onion, peeled and in coarse slices
1/2 teaspoon coconut oil *
1 pinch of salt
1 teaspoon sambal Oelek *
2 tablespoons smooth parsley, roughly chopped

100 g Gruyère cheese, grated
100 g cheddar cheese, grated
1 tsp butter

1 large coated frying pan *
with matching lid

Heat the coconut oil in a pan and distribute the onion slices in it. Season with salt and fry for about 15 minutes on medium heat until the onions are soft and nicely browned. Stir occasionally.
